Cooking Steps

  • Season the boneless, skinless chicken breasts with salt and pepper. Sear in olive oil over medium heat for 6-8 minutes, or until golden brown. Remove and let rest before slicing.
  • In the same skillet, add more olive oil if needed, then sauté minced garlic until fragrant, about 1 minute. Stir in canned San Marzano tomatoes and red pepper flakes, and let simmer for about 10 minutes.
  • Bring a pot of salted water to a boil, then cook spaghetti or linguine according to package instructions until al dente. Reserve some pasta water before draining.
  • Slice the rested chicken and return it to the skillet with the sauce. Add drained pasta, tossing together. If the sauce is too thick, add a splash of reserved pasta water.
  • Off the heat, stir in freshly chopped basil and finish with a sprinkle of grated Parmesan cheese. Serve immediately.
