How to Make

  • Start by chopping the onions, mincing the garlic, and finely dicing the chipotle peppers.
  • In a large skillet, heat oil over medium-high heat. Sear the chuck roast on all sides until browned, about 4-5 minutes per side.
  • Using the same skillet, sauté onions until translucent, around 5 minutes. Add garlic, chipotle peppers, cumin, and oregano; stir for one minute.
  • Pour the sautéed mixture over the beef in the slow cooker. Drizzle with lime juice and add beef broth.
  • Set your slow cooker to low and cook for 8 hours, or use high for 4 hours until beef is fork-tender.
  • Once done, shred the beef inside the slow cooker using two forks and stir in the cooking juices.
