How to Make Savory Delicious Roasted Veggie Lentil Salad

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Rinse the lentils under cold water, then cook in boiling water for about 20 minutes until tender but not mushy.
  • Chop the bell peppers, zucchini, and red onion into uniform bite-sized pieces.
