Ingredients

For the Base

  • 1 pound Breakfast Sausage can substitute turkey sausage
  • 4 cups Fresh Spinach can substitute kale
  • 8 ounces Mushrooms (Button or Cremini) or use zucchini or bell peppers
  • 6 large Eggs no substitutions recommended
  • 1 cup Milk (Whole) can use almond milk or oat milk

For the Topping

  • 1 cup Cheese (Shredded Cheddar or Mozzarella) consider feta or goat cheese
  • to taste Salt use freshly ground
  • to taste Pepper use freshly ground

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the breakfast sausage over medium heat.
  • Add in the diced mushrooms and fresh spinach, cooking until the spinach wilts, about 3-5 minutes.
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper until frothy.
  • Spread the sautéed sausage and vegetable mixture evenly in a greased baking dish.
  • Pour the egg mixture over the top, and sprinkle cheese generously across the surface.
  • Place the baking dish in the preheated oven and bake for 30-35 minutes, until the eggs are set and the top is golden brown.
  • Let the egg bake cool for a few minutes before slicing and serve warm.
