Preparation

  • Sauté Aromatics: Heat oil in a large pot over medium heat. Add diced onion, bell pepper, celery, and garlic. Sauté for about 5 minutes until softened and fragrant.
  • Add Beans and Liquid: Stir in soaked red beans and vegetable broth or water. Bring to a boil, then reduce heat to low and simmer gently.
  • Season the Dish: Add Cajun seasoning and bay leaves, mixing well. Allow to cook for approximately 45 minutes, stirring occasionally.
  • Cook the Rice: Prepare rice according to package instructions and fluff when done.
  • Optional Sausage: If using smoked sausage, add to the beans during the last 15 minutes of cooking.
  • Serve and Enjoy: Remove bay leaves and serve beans over rice. Garnish with chopped green onions or parsley.
