For the Marinade

  • 1/2 cup cherry preserves high-quality with real fruit chunks
  • 1/4 cup soy sauce low-sodium recommended
  • 3 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons lime juice freshly squeezed
  • 1/2 teaspoon black pepper freshly ground

For Thickening the Sauce

  • 1 tablespoon cornstarch create a slurry with water

Cooking Instructions

  • Preheat the oven to 375°F (190°C). Pat the chicken thighs dry and season with salt and black pepper.
  • Whisk together cherry preserves, soy sauce, minced garlic, grated ginger, lime juice, and optional red pepper flakes in a medium bowl.
  • Marinate the chicken thighs in the sauce for at least 30 minutes, or overnight for better flavor.
  • Heat oil in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes.
  • Transfer chicken to an oven-safe dish, pour remaining marinade over them, and bake until internal temperature reaches 165°F (74°C).
  • Pour the sauce from the baking dish into a saucepan, stir in the cornstarch slurry, and heat until thickened. Drizzle the glaze over the chicken before serving.
