Ingredients

For the Pasta

  • 8 oz spaghetti or fettuccine Select pasta that holds sauce well.

For the Shrimp

  • 1 lb shrimp Fresh or frozen, peeled and deveined.

For the Asparagus

  • 1 lb asparagus Choose firm stalks.

For the Flavor

  • 4 cloves garlic Minced, fresh garlic is preferred.
  • 2 tbsp lemon juice Freshly squeezed for best flavor.
  • 2 tbsp olive oil High-quality extra virgin is recommended.

For the Finish

  • 1/2 cup Parmesan cheese Freshly grated is best.

  • to taste pepper

Instructions

Directions

  • Bring a large pot of salted water to a boil. Add the pasta of your choice and cook until al dente, about 8-10 minutes.
  • In a skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add the seasoned shrimp and cook for 3-4 minutes until pink and opaque.
  • Toss in chopped asparagus and sauté for an additional 3 minutes until bright green and tender-crisp.
  • Remove from heat, squeeze fresh lemon juice over the shrimp and asparagus mixture, and stir well.
  • Drain the pasta, reserving a cup of pasta water. Add drained pasta to the skillet and mix well with the shrimp-asparagus mixture, adding reserved pasta water as needed.
  • Grate fresh Parmesan cheese over the pasta and toss gently to combine. Serve hot with extra lemon wedges.

Notes

Optional: Garnish with fresh parsley for added flavor and color.
