Ingredients

For the Crust

  • 1.5 cups Graham Cracker Crumbs Finely crushed
  • 0.5 cups Unsalted Butter Melted

For the Filling

  • 8 oz Cream Cheese Softened to room temperature
  • 1 cup Sour Cream
  • 0.75 cups Granulated Sugar Adjust based on preference
  • 0.5 cups Fresh Lemon Juice Use freshly squeezed
  • 1 tablespoon Lemon Zest From fresh lemons
  • 3 large Eggs At room temperature

Instructions

Create the Crust

  • Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until moistened. Press this mixture firmly into a greased baking pan to form a sturdy base.

Prepare the Filling

  • In a mixing bowl, beat cream cheese until it’s smooth and creamy. Gradually add granulated sugar, mixing well to ensure a fluffy texture without lumps.

Add Flavor

  • Gently incorporate sour cream, fresh lemon juice, and zest into the cream cheese mixture until fully combined.

Incorporate Eggs

  • One by one, beat in the eggs, mixing gently after each addition. Be careful not to overmix.

Bake

  • Pour the filling over your prepared crust, smoothing the top with a spatula. Bake for 25-30 minutes until the edges are set but the center still has a slight jiggle.

Cool and Chill

  • Allow the cheesecake bites to cool at room temperature, then refrigerate for at least 2 hours to set.

Optional Serving Suggestions

  • Serve with fresh berries on top for an extra burst of flavor.

Notes

Use room temperature cream cheese for a smoother filling and remember to chill for at least 2 hours before serving.
