Instructions

How to Make Rich Creamy Potato Leek Soup

  • Slice the leeks thinly and rinse them thoroughly under cold water to remove any dirt. Make sure they are well-drained before cooking.
  • In a large pot, melt the butter over medium heat, then add the leeks. Sauté for about 5 minutes, until they become soft and fragrant.
  • Stir in the diced Yukon Gold potatoes along with the vegetable broth. Bring the mixture to a gentle boil, reduce the heat, and simmer for 15-20 minutes until the potatoes are tender.
  • Using an immersion blender, blend the soup until it’s smooth and creamy, creating that wonderful velvety texture.
  • Return the pot to low heat and mix in the heavy cream. Taste and season with salt and pepper to your liking.
  • Ladle the warm soup into bowls, garnish with fresh herbs, and savor each comforting bite.

Notes

For optimal flavor, consider adding minced garlic or a splash of white wine early in the cooking process.
