Ingredients

For the Marinade

  • 1/4 cup Olive Oil or avocado oil for neutral flavor
  • 1/4 cup Lemon Juice fresh lemon recommended
  • 3 cloves Minced Garlic or garlic powder as backup
  • 2 tablespoons Chopped Rosemary fresh preferred

  • 1 teaspoon Pepper adjust to taste

For the Chicken and Potatoes

  • 4 pieces Chicken Thighs can swap with chicken breasts
  • 4 cups Potatoes or sweet potatoes/seasonal vegetables

Instructions

Preparation

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Whisk together olive oil, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper.
  • Marinate the chicken thighs in the mixture for at least 30 minutes, or up to overnight.
  • Chop potatoes into 1-inch chunks and toss them with olive oil, salt, pepper, and herbs.
  • Arrange marinated chicken thighs skin-side up on one side of the baking sheet and spread the potatoes around.
  • Bake for 40-45 minutes until the chicken is golden brown and reaches an internal temperature of 165°F.
  • Serve hot, garnished with fresh herbs for flavor.

Notes

Marinate overnight for deeper flavor. For extra crispiness, sear chicken thighs before baking.
