  • 2 tablespoons Chili Powder adjust for heat preference
  • 1 can Diced Tomatoes fire-roasted preferred
  • 4 cups Chicken Broth low-sodium

For Garnish

  • 1 bunch Cilantro optional but recommended

How to Make Hearty Ultimate One-Pot Chicken and Black Bean Chili

  • Heat oil in a large pot over medium heat. Add chopped onions and diced bell peppers, cooking until softened, about 5 minutes.
  • Stir in minced garlic, ground cumin, and chili powder. Cook for about 1 minute until fragrant.
  • Add boneless, skinless chicken breasts and rinsed black beans to the pot. Stir to coat the chicken with spices.
  • Pour in the diced tomatoes with their juice and low-sodium chicken broth. Bring to a gentle boil.
  • Lower the heat, cover, and let simmer for 20-25 minutes, or until the chicken is cooked through.
