Instructions

How to Make Hearty Rich Pork Stew

  • Prepare the Ingredients: Start by chopping your onions, carrots, and potatoes into bite-sized pieces. Mince the garlic and set everything aside to streamline your cooking process.
  • Sear the Pork: Heat olive oil in a large pot over medium-high heat. Season the pork shoulder with salt and pepper, then add to the pot, browning it on all sides for about 5-7 minutes until golden brown.
  • Sauté Vegetables: Once the pork is seared, remove it from the pot. Add the onions to the same pot and sauté until they become translucent, about 3-4 minutes. Then, stir in the minced garlic and cook for another minute until fragrant.
  • Add Broth & Simmer: Pour in your choice of broth, scraping the bottom of the pot to lift any flavorful browned bits. Return the pork to the pot and add in the chopped carrots, potatoes, thyme, and bay leaf.
  • Cook Low and Slow: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, or until the pork is fork-tender and the flavors are well blended.
  • Season Before Serving: Finally, taste your stew and adjust the salt and pepper as needed. Serve hot alongside crusty bread or over a bed of fluffy rice for a cozy meal.

Notes

Garnish with fresh parsley for a touch of color before serving. Leftovers can be stored in an airtight container in the fridge for up to three days.
