Preparation Steps

  • Bring a large pot of salted water to a boil. Add your fettuccine or penne and cook until al dente, about 8-10 minutes.
  • In a large skillet, heat a splash of olive oil over medium heat. Add your sliced or cubed chicken, seasoning with salt and pepper, and cook until golden brown, around 6-7 minutes.
  • Toss in minced garlic, sautéing until fragrant, roughly 1 minute. Then add in the spinach and stir until wilted, about 2-3 minutes.
  • Lower the heat and pour in the heavy cream. Let it simmer for around 5 minutes, stirring occasionally until it thickens. Stir in the grated Parmesan cheese until smooth and melted.
  • Drain your pasta and add it directly into the skillet with the sauce. Mix well to ensure every piece is coated, allowing it to rest for 1-2 minutes to absorb the flavors.
  • Plate up the creamy pasta and top with more Parmesan and a sprinkle of freshly cracked pepper. Serve warm and enjoy!
