Ingredients

For the Chili

  • 1 pound Ground Turkey Can substitute with ground beef or lentils.
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.
  • 2 cups Bell Peppers Chopped assorted colors.
  • 1 can Diced Tomatoes Canned versions are convenient.
  • 1 cup Corn Optional, can omit or replace.
  • 1 can Black Beans Rinsed.
  • 2 tablespoons Olive Oil For sautéing.
  • 2 tablespoons Chili Powder Adjust for heat preference.
  • 1 teaspoon Cumin
  • 4 cups Vegetable Broth Chicken broth can be used.

Instructions

Cooking Steps

  • Begin by chopping your veggies—onions, bell peppers, and garlic—into bite-sized pieces.
  • Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onions and minced garlic; cook for about 3-4 minutes until they are fragrant and translucent.
  • Crumble 1 pound of ground turkey into the pot. Cook, stirring frequently, for about 5-7 minutes, or until it’s browned and no longer pink.
  • Toss in your chopped bell peppers along with the diced tomatoes and optional corn. Sauté everything together for another 3-4 minutes until the vegetables soften.
  • Sprinkle in 2 tablespoons of chili powder and 1 teaspoon of cumin. Toast the spices in the mixture for 1 minute to awaken their flavors, stirring continuously.
  • Pour in 4 cups of vegetable broth and add 1 can of rinsed black beans. Bring the mixture to a gentle simmer, cover partially, and let it cook for 20-25 minutes, stirring occasionally to blend the flavors.

Notes

Optional: Top with fresh cilantro or a squeeze of lime before serving for an extra burst of flavor.
