Ingredients

For the Soup Base

  • 6 cups Yukon Gold Potatoes Cubed
  • 2 tablespoons Fresh Rosemary Chopped
  • 4 cups Vegetable Broth Low-sodium recommended
  • 1 medium Onion Diced
  • 3 cloves Garlic Minced

For Creaminess

  • 1 cup Heavy Cream or Whole Milk Stir in right before serving

For Seasoning

  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

Instructions

Preparation

  • Wash and cube Yukon Gold potatoes into evenly sized pieces.
  • In a medium skillet, sauté diced onions and minced garlic over medium heat until translucent, approximately 5 minutes.
  • Transfer the sautéed onions and garlic into the slow cooker with the cubed potatoes, then pour in enough vegetable broth to cover the ingredients.
  • Sprinkle fresh rosemary, salt, and pepper into the mix, stirring gently to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, carefully use an immersion blender to puree the soup to a smooth consistency, then stir in heavy cream or whole milk before serving hot.

Notes

Optional: Garnish with extra fresh rosemary before serving. Store leftover soup in airtight containers for up to 5 days.
