Ingredients

For the Salmon

  • 4 fillets Salmon Fillets fresh, skin-on
  • 2 tablespoons Olive Oil for drizzling

For the Filling

  • 4 cups Fresh Spinach crisp, fresh leaves
  • 1 cup Feta Cheese crumbled, goat cheese can be a substitute
  • 2 cloves Garlic fresh, minced
  • 2 tablespoons Lemon Juice for brightness
  • 1/2 cup Panko Breadcrumbs for crunch
  • 1 teaspoon Dried Herbs like dill or oregano, to taste

  • 4 wedges Lemon Wedges for serving

Instructions

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • In a skillet, heat a splash of olive oil over medium, sauté garlic for about 1 minute until fragrant, then add spinach and cook until wilted, about 3-4 minutes.
  • In a mixing bowl, combine the sautéed spinach, feta, panko breadcrumbs, lemon juice, salt, pepper, and dried herbs until well mixed.
  • Slice pocket openings into the skin-side of the salmon fillets and fill each pocket generously with the spinach-feta mixture.
  • Place salmon in the baking dish, drizzle with olive oil, season with salt and pepper, and bake for 20-25 minutes until the salmon flakes easily with a fork.
  • Let the stuffed salmon cool slightly before serving. Add lemon wedges on the side for extra zest.
