Ingredients

For the Rice Base

  • 1 cup Long-grain Rice Rinse well before cooking.
  • 2 cups Vegetable Broth Low-sodium options recommended.

For the Vegetables

  • 2 tablespoons Olive Oil
  • 3 cloves Garlic Minced.
  • 1 Bell Pepper Chopped.

For the Protein

  • 1 can Chickpeas Drained and rinsed.

For Seasoning and Brightness

  • 2 tablespoons Lemon Juice Can substitute lime juice.
  • 1 teaspoon Dried Oregano Can use Italian seasoning as alternative.
  • 1 teaspoon Dried Thyme Fresh thyme is also a lovely substitute.
  • Salt To taste.
  • Pepper To taste.

Instructions

How to Make

  • Rinse the Rice: Start by rinsing 1 cup of long-grain rice under cold water until the water runs clear.
  • Heat the Oil: In a large pan, warm 2 tablespoons of olive oil over medium heat. Sauté 3 minced garlic cloves until fragrant.
  • Sauté the Veggies: Add 1 chopped bell pepper to the pan and stir-fry for about 5 minutes.
  • Add Rice & Broth: Stir in the rinsed rice along with 2 cups of vegetable broth and bring to a gentle boil.
  • Simmer: Reduce heat to low, cover, and let simmer for 18 minutes or until liquid is absorbed.
  • Combine & Season: Fluff rice with a fork, then fold in 1 can of drained chickpeas and seasonings.
