Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Halve the delicata squash lengthwise and scoop out the seeds. Cut it into 1-inch thick half-moon shapes.
  • In a large mixing bowl, combine the squash slices with olive oil, maple syrup, salt, pepper, and fresh thyme. Toss until coated.
  • Spread the seasoned squash on a parchment-lined baking sheet and roast for 25-30 minutes until golden and tender.
  • Sprinkle crumbled goat cheese over the roasted squash and return to the oven for 5 minutes.
  • Let it cool slightly before transferring to a serving platter. Drizzle with extra maple syrup if desired.
