Ingredients

For the Carrots

  • 1 pound Carrots Peeled and cut evenly
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 teaspoon Salt Adjust according to taste
  • 1/2 teaspoon Black Pepper For warmth

For the Whipped Feta

  • 8 ounces Feta Cheese Can swap with goat cheese
  • 1 tablespoon Lemon Juice Fresh squeezed is best
  • 1 tablespoon Olive Oil Use same oil as in carrots

Garnishes & Extras

  • 1/4 cup Fresh Herbs Optional, such as parsley or dill
  • Spices Optional, such as cumin or smoked paprika

Instructions

Preparation

  • Preheat oven to 425°F (220°C).
  • Wash and peel the carrots, cut into uniform pieces and toss with olive oil, salt, and pepper.
  • Spread carrots on a parchment-lined baking sheet. Roast for 25-30 minutes until golden brown and tender.
  • In a food processor, blend feta cheese, lemon juice, and olive oil until smooth. Adjust seasoning as needed.
  • Top roasted carrots with whipped feta and garnish with fresh herbs. Serve warm.

Notes

Optional: Drizzle with extra olive oil for added richness.
