Ingredients

For the Rice Cups

  • 1 cup sushi rice Use short-grain rice for that sticky texture
  • 3 tablespoons rice vinegar Adds a tangy flavor

For the Filling

  • 1 cup fresh salmon Opt for sushi-grade salmon
  • 1 medium avocado Choose ripe avocados for creaminess
  • 2 tablespoons green onions Finely chopped for crunch

For Dipping

  • 4 tablespoons soy sauce Go for low-sodium
  • wasabi or spicy mayo Optional for added heat

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Rinse 1 cup of sushi rice under cold water until the water runs clear.
  • In a medium pot, combine the rinsed rice with 1 ¼ cups of water and bring it to a boil, then cover and simmer on low heat for about 15 minutes.
  • Fluff rice with a fork, then mix in 3 tablespoons of rice vinegar, 1 tablespoon of sugar, and ½ teaspoon of salt.
  • Lightly grease a muffin tin, press the seasoned rice firmly into each cup, and bake for 15 minutes until golden brown.
  • Fill each cup with diced sushi-grade salmon, avocado slices, and sprinkle chopped green onions. Drizzle with soy sauce or top with spicy mayo.
