  • Preheat the oven to 400°F (200°C). Wash the large russet potatoes thoroughly and poke holes in each with a fork.
  • Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  • Cool the potatoes slightly before cutting them in half lengthwise. Scoop out most of the flesh into a bowl.
  • Mash the potato flesh with unsalted butter, sour cream, salt, pepper, half of the cheddar cheese, and green onions until smooth.
  • Refill the potato skins with the creamy mixture. Top with remaining cheddar cheese and optional bacon bits.
  • Return the filled potatoes to a baking sheet and bake for another 15-20 minutes.
  • Let cool for a few minutes before serving. Garnish with extra green onions if desired.

Notes

Serve with a dollop of extra sour cream on top for an extra creamy bite.
