  • 4 tbsp Unsalted Butter
  • 1 cup Sour Cream Adds creamy texture.
  • 1 cup Shredded Cheddar Cheese Sharp cheddar for bold flavor.
  • 3 tbsp Green Onions Swap with chives for milder taste.

Instructions

Steps

  • Preheat your oven to 400°F (200°C).
  • Wash the russet potatoes thoroughly and poke holes in them with a fork.
  • Bake the potatoes directly on the oven rack for 45-60 minutes, or until they’re fork-tender.
  • Cool them slightly, then cut each potato in half lengthwise and scoop out the flesh into a mixing bowl.
  • Mash the scooped potato with butter, sour cream, salt, pepper, half the shredded cheese, and green onions until creamy.
  • Spoon the creamy filling back into the potato skins, mounding it above the edges.
  • Return the stuffed potatoes to the oven for another 15-20 minutes until the tops are golden brown and bubbly.
  • Cool for a few minutes before serving and garnish with additional green onions if desired.

Notes

Serve with a dollop of sour cream for extra creaminess.
