Instructions
Steps
Preheat your oven to 400°F (200°C).
Wash the russet potatoes thoroughly and poke holes in them with a fork.
Bake the potatoes directly on the oven rack for 45-60 minutes, or until they’re fork-tender.
Cool them slightly, then cut each potato in half lengthwise and scoop out the flesh into a mixing bowl.
Mash the scooped potato with butter, sour cream, salt, pepper, half the shredded cheese, and green onions until creamy.
Spoon the creamy filling back into the potato skins, mounding it above the edges.
Return the stuffed potatoes to the oven for another 15-20 minutes until the tops are golden brown and bubbly.
Cool for a few minutes before serving and garnish with additional green onions if desired.
Notes
Serve with a dollop of sour cream for extra creaminess.
