Filling

  • 1 pound Boneless, Skinless Chicken Breasts can be substituted with turkey
  • 2 medium Fresh Leeks can substitute with green onions
  • 1 cup Heavy Cream for a rich sauce

Crust

  • 2 sheets Puff Pastry store-bought recommended
  • 2 tablespoons Butter for sautéing leeks

Preparation

  • Melt 2 tablespoons of butter in a skillet over medium heat. Sauté sliced leeks for about 5 minutes until they become tender and aromatic.
  • Dice 1 pound of boneless chicken breasts and add them to the skillet along with 1 cup of chicken broth. Simmer for approximately 10 minutes until the chicken is fully cooked and tender.
  • Stir in 1 cup of heavy cream, season with salt and pepper to taste, and add your choice of fresh thyme or parsley. Cook until the mixture thickens slightly, which should take about 3-5 minutes.
  • Preheat your oven to 400°F (200°C). Roll out two sheets of puff pastry; place one in a pie dish, add the filling, and cover with the second pastry sheet.
  • Crimp the edges of the pie crust with a fork to seal, and cut slits in the top layer to allow steam to escape while baking.
  • Place the pie in the oven and bake for 25-30 minutes, until it is golden brown and bubbling with deliciousness.
