  • 6 slices Thick slices of brioche or challah
  • 4 Large eggs Fresh
  • 1 cup Whole milk Can substitute with dairy alternative
  • 1 tsp Ground cinnamon Freshly ground recommended
  • 2 tbsp Granulated sugar Brown sugar can be used

For the Blueberry Sauce

  • 2 cups Fresh blueberries Frozen may be used

For Serving

  • 1 cup Plain Greek yogurt Creamy texture
  • 2 tbsp Unsalted butter For cooking

Preparation Steps

  • In a mixing bowl, combine large eggs, whole milk, granulated sugar, and ground cinnamon. Whisk until frothy and well blended.
  • Place a nonstick skillet on medium heat and melt unsalted butter until sizzling.
  • Take thick slices of brioche or challah and briefly dip them into the custard mixture, soaking until just saturated.
  • Place soaked bread slices in the skillet and sauté for 3-4 minutes per side until golden brown.
  • In a saucepan over medium heat, add fresh blueberries and a splash of water or lemon juice; cook until blueberries burst into sauce.
  • Cut the golden French toast into finger-sized pieces, stack, and top with Greek yogurt and blueberry sauce.
