Cooking Steps

  • Preheat the oven to 400°F (200°C).
  • Pat dry the pork tenderloin and season generously with salt and pepper.
  • Whisk together the balsamic vinegar, honey, minced garlic, and thyme (if using) in a bowl until well combined.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides (about 3-4 minutes per side) until golden brown.
  • Arrange the baby potatoes around the pork in the skillet. Drizzle half of the balsamic glaze over both the pork and potatoes.
  • Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the pork reaches 145°F (63°C).
  • Rest the pork for about five minutes after removing from oven.

Notes

Serve with a sprinkle of fresh thyme for an aromatic touch. Perfect for meal prep as leftovers taste just as delicious.
