  • 2 cups Apples sweet varieties like Honeycrisp or Fuji
  • 1 medium Onion yellow onion
  • 4 cloves Garlic fresh
  • 4 cups Vegetable Broth low-sodium

  • Preheat your oven to 400°F (200°C). Chop the pumpkin and apples into even-sized cubes.
  • Toss the cubed pumpkin and apples in olive oil on a baking sheet. Roast for 25-30 minutes until tender and caramelized.
  • In a large pot, sauté the chopped onion and minced garlic over medium heat until the onion is translucent, about 5 minutes.
  • Add the roasted pumpkin, apples, and vegetable broth to the pot. Bring to a gentle simmer for 10 minutes.
  • Use an immersion blender or transfer the mixture to a blender to puree until creamy and smooth.
  • Stir in the coconut milk along with cinnamon and nutmeg. Heat over low until warmed through, adjusting seasoning if needed.
