Ingredients

For the Pasta

  • 12 ounces Pasta Fettuccine or penne work well.

For the Sauce

  • 1 pound Shrimp Can be replaced with chicken.
  • 2 tablespoons Olive Oil For sautéing shrimp.
  • 2 cloves Garlic Minced.
  • 4 ounces Fresh Spinach Or frozen, well-drained.
  • 1 cup Ricotta Cheese
  • 1/2 cup Parmesan Cheese Grated.
  • 2 tablespoons Lemon Juice Freshly squeezed.

Cooking Steps

  • Bring a large pot of salted water to a boil. Add your favorite pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  • In a skillet over medium heat, add olive oil. Once warm, add the shrimp, seasoning with salt and pepper. Cook for 3-4 minutes per side until they turn pink and opaque.
  • Toss in minced garlic and fresh spinach into the skillet. Sauté for about 1 minute, or until the garlic becomes fragrant and the spinach wilts beautifully.
  • Lower the heat slightly, then mix in the ricotta and Parmesan cheese. Stir gently until a creamy sauce forms.
  • Drain the cooked pasta (reserving a cup of cooking water). Add the pasta to the skillet, tossing well to coat with the sauce. Use reserved water to reach desired consistency if needed.
  • Remove from heat and drizzle fresh lemon juice over the pasta before serving.

Notes

For optional garnishing, use fresh basil or extra Parmesan. Store leftovers in an airtight container in the fridge for up to 3 days.
