Ingredients

For the Pasta

  • 12 oz Pasta Fettuccine or penne recommended

For the Protein

  • 1 lbs Shrimp Fresh or frozen

For the Sauce

  • 2 tbsp Olive Oil For sautéing
  • 3 cloves Minced Garlic Fresh is best
  • 1 cup Heavy Cream Or half and half for a lighter option
  • 8 oz Mozzarella Cheese Fresh mozzarella preferred
  • 1/2 cup Parmesan Cheese Grated for best taste
  • to taste Salt Essential for seasoning
  • to taste Pepper Essential for seasoning

Optional Add-Ins

  • 2 cups Spinach Toss in just before serving
  • 1/2 cup Sun-Dried Tomatoes For added sweetness and tang

Instructions

Cooking Instructions

  • Boil a large pot of salted water. Add your pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving a cup of pasta water.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Toss in the shrimp and cook until pink and opaque, about 3-4 minutes.
  • Lower the heat and pour in the heavy cream. Add cubed mozzarella and stir continuously until melted and creamy, about 3-5 minutes.
  • Sprinkle in the grated Parmesan, and season with salt and pepper. Let it simmer gently for a few minutes to meld flavors.
  • Toss the drained pasta into the skillet, mixing with the creamy sauce until every strand is coated. If too thick, add a splash of reserved pasta water.
  • Plate your pasta and top off with fresh basil for color and flavor. Serve hot with garlic bread.

Notes

Optional: Sprinkle with red pepper flakes for a spicy kick.
