Ingredients

For the Crust

For the Custard Filling

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease your mini tart pans.
  • In a mixing bowl, combine all-purpose flour and granulated sugar. Cut in cold, cubed unsalted butter until crumbly. Gradually add ice water and mix until dough forms. Chill for 30 minutes.
  • Once chilled, roll out the dough on a floured surface to about 1/8 inch thick. Use a circle cutter to cut rounds larger than your tart pans.
  • Gently place the dough rounds into your tart pans, trimming excess and pricking the bottoms with a fork.
  • Bake the tart crusts for approximately 15 minutes or until golden brown. Let cool completely.

Custard Filling

  • In a saucepan, warm whole milk and vanilla extract until steaming.
  • Whisk together eggs and sugar in a separate bowl until pale, then slowly incorporate the warm milk mixture.
  • Pour the custard filling into each cooled tart shell and bake for around 20 minutes until set but slightly wobbly in the center.

Topping

  • Slice fresh strawberries and arrange them atop the custard filling.
  • For an extra touch, drizzle with melted chocolate or sprinkle powdered sugar before serving.

Notes

Chill dough for at least 30 minutes for a flaky texture. Use room temperature eggs for even mixing and setting.
