For the Crust

  • 1 cup Graham Crackers crushed to form the base
  • 1/2 cup Unsalted Butter melted
  • 1/4 cup Granulated Sugar

For the Cheesecake Filling

  • 16 oz Cream Cheese full-fat
  • 1/2 cup Granulated Sugar
  • 1/4 cup Brown Sugar
  • 1 cup Sour Cream full-fat
  • 3 large Eggs fresh and at room temperature
  • 1 teaspoon Vanilla Extract pure

For Topping

  • 1 cup Heavy Cream whipped
  • 1 cup Pecans toasted
  • 1/2 cup Caramel Sauce for drizzling

  • Preheat your oven to 325°F (160°C). Prepare your 9-inch springform pan with cooking spray or butter.
  • In a bowl, mix the crushed graham crackers with melted butter and granulated sugar until well combined. Press mixture into the bottom of your prepared pan to form a crust.
  • Beat the cream cheese in a mixing bowl until smooth. Gradually add granulated and brown sugars, mixing until fluffy.
  • Blend in sour cream and vanilla extract. Add eggs one at a time, mixing just until combined.
  • Pour the cheesecake filling over the prepared crust, spreading it evenly.
  • Bake for 50-60 minutes until edges are set and center is slightly jiggly.
  • Once baked, turn off the oven, crack the door, and cool the cheesecake in the oven for 1 hour.
  • Transfer cheesecake to the refrigerator. Chill for at least 4 hours, ideally overnight.
  • Whip heavy cream until soft peaks form, sweetening as desired. Spread topping over cooled cheesecake.
  • Sprinkle toasted pecans over the whipped cream and drizzle with caramel sauce before serving.
