Ingredients

For the Creamy Sauce

For Cooking

Cooking Instructions

  • Bring a large pot of salted water to a rolling boil and add the fettuccine. Cook until al dente, about 8-10 minutes.
  • While the pasta cooks, heat a splash of olive oil in a large skillet. Season the chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until golden brown. Transfer to a plate and let rest.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add spinach and artichoke hearts, stirring until the spinach wilts.
  • Pour in the heavy cream, stirring gently to combine. Gradually add grated Parmesan cheese, stirring continuously for 2-3 minutes until the cheese melts and the sauce becomes creamy.
  • Slice the rested chicken and return it to the skillet along with the drained pasta. Toss gently until the pasta is coated in the sauce.
  • Dish out onto plates, sprinkling additional Parmesan cheese on top. Enjoy while it’s hot.

Notes

For an extra burst of freshness, adding a squeeze of lemon juice before serving is recommended.
