Ingredients

For the Pasta

For the Sauce

Instructions

Procedure

  • Preheat your oven to 400°F (200°C). Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast until golden brown, about 30-40 minutes.
  • Bring a large pot of salted water to a boil. Add the pappardelle and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp seasoned with salt and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.
  • Squeeze the roasted garlic into the same skillet, discarding the papery husk. Pour in the heavy cream and stir well, scraping any bits from the bottom of the skillet. Cook until the sauce thickens slightly, about 2-3 minutes.
  • Return the sautéed shrimp and cooked pappardelle to the skillet. Toss everything gently until well-coated in the creamy sauce. Stir in the grated Parmesan cheese, mixing until melted and combined.
  • Transfer to plates and top with fresh parsley. Serve warm, accompanied by crusty bread for dipping.

Notes

Optional: Add a sprinkle of chili flakes for a hint of spice.
