Ingredients

For the Pasta

  • 8 oz Pasta Penne or fusilli works best.

For the Filling

  • 1 lb Italian Sausage Sweet or spicy, chopped.
  • 2 cups Sweet Potatoes Diced.
  • 2 cups Fresh Spinach
  • 1 medium Onion Chopped.

For the Creamy Sauce

  • 1 cup Heavy Cream Can substitute half-and-half.
  • 3 cloves Garlic Minced.
  • 1/2 cup Parmesan Cheese Freshly grated, plus more for serving.
  • 2 tbsp Olive Oil For sautéing.
  • To taste Salt
  • To taste Pepper

Instructions

Cooking Steps

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and sliced sausage; cook until sausage is browned and onion turns translucent, about 5-7 minutes.
  • Stir in minced garlic and diced sweet potatoes; sauté for about 5 minutes until fragrant and sweet potatoes begin to soften.
  • Meanwhile, boil a pot of salted water and add pasta. Cook according to package instructions until al dente. Reserve half a cup of the pasta water before draining.
  • Pour heavy cream into the sausage mixture. Simmer gently for 3-4 minutes, stirring occasionally, until the sauce slightly thickens, coating the sausage and sweet potatoes.
  • Add the cooked pasta and reserved pasta water to the skillet, mixing gently until everything is well combined and creamy. Fold in fresh spinach until just wilted.
  • Remove from heat and sprinkle in freshly grated Parmesan cheese; stir until melted and serve hot, garnished with more cheese if desired.

Optional: Drizzle with a bit of olive oil or add crushed red pepper flakes for an extra kick!
