  • 3 cloves Garlic minced

  • 1 cup Cream or coconut milk for dairy-free
  • 1 cup Shredded Cheese or nutritional yeast for dairy-free

Instructions

Cooking Steps

  • Wash cauliflower and chop into florets. Dice onion and mince garlic.
  • In a large pot, heat olive oil over medium heat and sauté onions until translucent, about 5 minutes.
  • Stir in minced garlic and cauliflower florets, sauté for 3-4 minutes.
  • Pour in vegetable broth, bring to a gentle boil, then simmer for 15 minutes until cauliflower is tender.
  • Blend the soup until smooth using an immersion blender, or in batches with a regular blender.
  • Return to low heat, stir in cream/coconut milk and shredded cheese, allow it to melt for 5 minutes.
