  • Begin by dicing the onion and bell peppers into small pieces. If your chicken is frozen, thaw it in advance.
  • In a large pot, heat a drizzle of olive oil over medium heat. Sauté the chopped onion until translucent, then add garlic and bell peppers, cooking until tender.
  • Place the boneless, skinless chicken breasts in the pot and sear for about 5 minutes per side until golden-brown.
  • Sprinkle the cumin and chili powder over the chicken and sautéed veggies, then add chicken broth and rinsed white beans. Mix well.
  • Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 30 minutes.
  • Carefully remove the cooked chicken from the pot. Shred the chicken and return it to the pot, stirring to mix.
  • Optional: Garnish with a dollop of sour cream or Greek yogurt.
