Instructions

How to Make Cozy Creamy Broccoli Soup

  • Wash and chop your fresh broccoli, onion, and garlic into bite-sized pieces.
  • In a large pot, melt 2 tablespoons of butter over medium heat. Add chopped onion and garlic, cooking until they become translucent, about 3-5 minutes.
  • Add the chopped broccoli and 4 cups of vegetable broth to the pot. Bring to a gentle boil, then let it simmer for around 15 minutes until the broccoli is tender.
  • Carefully transfer the soup to a blender and puree until smooth.
  • Return the blended soup back to the pot. Stir in 1 cup of cream, then season with salt, pepper, and a pinch of nutmeg. Heat gently.
  • Ladle the soup into bowls and garnish with extra broccoli florets or crispy croutons.
