Preparation Steps

  • Preheat oven to 350°F (175°C) and coat a 9×13-inch baking dish with nonstick spray.
  • Season chicken breasts with salt and pepper; place in the bottom of the prepared baking dish.
  • Melt butter in a skillet over medium heat; sauté diced onion and celery until soft and translucent, about 5 minutes.
  • In a large bowl, mix stuffing mix, cream of chicken soup, chicken broth, and sautéed veggies until well combined.
  • Pour stuffing mixture evenly over chicken in the baking dish.
  • Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes.
  • Let the casserole sit for 10 minutes before serving.
