Instructions

Dough Preparation

  • In a large mixing bowl, combine the flour and salt. Form a well in the center, then crack in the eggs and gradually add water. Knead until the dough is smooth and elastic, about 8 minutes.

Filling Preparation

  • Boil the potatoes until tender, then mash them. Mix in the cottage cheese and sautéed onions until the filling is creamy. Set aside to cool.

Pierogi Assembly

  • Divide the dough into smaller pieces and roll each out on a floured surface to about 1/8 inch thickness.
  • Use a round cutter or glass to cut 3-inch circles from the rolled dough, being sure to re-roll scraps for more circles.
  • Place a tablespoon of your filling in the center of each circle. Fold the dough over and pinch the edges tightly to seal.

Cooking Pierogi

  • Bring a pot of salted water to a boil. Add pierogi in batches and cook until they float, about 3-5 minutes. Remove with a slotted spoon.
  • Optionally sauté the cooked pierogi in butter until golden brown, or serve directly with a side of sour cream.
