Ingredients

For the Blondie Base

  • 1 cup Unsalted Butter softened, or margarine for dairy-free
  • 1 cup Brown Sugar light brown sugar for softer taste
  • 1/2 cup Granulated Sugar
  • 2 large Eggs fresh for best results
  • 2 cups All-Purpose Flour can substitute half with whole wheat flour
  • 2 teaspoons Baking Powder

For the Spices

  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Ginger
  • 2 teaspoons Vanilla Extract

For the Topping

  • 1 cup Powdered Sugar for dusting

Instructions

Making the Blondies

  • Preheat your oven to 350°F (175°C).
  • Grease an 8x8 inch baking dish with butter or line it with parchment paper.
  • In a large mixing bowl, cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  • Beat in the eggs one at a time along with the vanilla extract until smooth and well-combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, and ground ginger until evenly mixed.
  • Gradually fold the dry mixture into the wet ingredients until just combined.
  • Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
  • Allow to cool in the pan for a few minutes, then slice into squares and dust with powdered sugar before serving.
