Ingredients

For the Salad

  • 5 cups Arugula
  • 2 medium Persimmons ripe, sliced into wedges
  • 1 cup Walnuts or Pecans toasted
  • 1 cup Feta Cheese crumbled

For the Dressing

  • 1/4 cup Olive Oil high-quality extra-virgin
  • 2 tablespoons Balsamic Vinegar aged
  • 1 tablespoon Honey preferably local
  • to taste Salt

Directions

  • Wash the arugula thoroughly under cold running water and pat dry.
  • Slice the ripe persimmons into thin wedges.
  • Toast the walnuts or pecans in a dry skillet over medium heat for about 5 minutes until fragrant.
  • Whisk together olive oil, balsamic vinegar, honey, salt, and pepper in a mixing bowl.
  • Toss the arugula gently with the persimmons and toasted nuts in a large salad bowl.
  • Drizzle the dressing over the salad just before serving.
  • Sprinkle crumbled feta cheese on top and serve immediately.

Notes

Optional: Garnish with a few extra walnuts for added crunch. For the best quality, dress the salad right before serving.
