  • 1 box Pistachio Pudding Mix
  • 1 cup Unsalted Butter softened
  • 1 cup Granulated Sugar
  • 3 Eggs large
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder

For the Gooey Topping

  • 8 ounces Cream Cheese softened
  • 2 cups Powdered Sugar
  • 1 cup Chopped Pistachios

Instructions

How to Make Decadent Pistachio Gooey Butter Cake

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • Cream together the unsalted butter and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing well.
  • Sift in the all-purpose flour, pistachio pudding mix, and baking powder. Mix gently.
  • Pour the batter into the prepared pan, spreading it evenly.
  • In another bowl, beat together cream cheese, remaining eggs, powdered sugar, and another packet of pistachio pudding mix.
  • Pour the topping over the batter without mixing the two layers.
  • Bake for 40-45 minutes, until the edges are golden and the center jiggles.
  • Allow to cool completely before slicing into squares and sprinkle with chopped pistachios.

Notes
