Ingredients

For the Casserole

  • 1 pound lean ground beef use for a healthier dish
  • 1 can canned black beans rinsed
  • 1 can canned corn drained
  • 1 can diced tomatoes fire-roasted preferred
  • 1 medium onion chopped
  • 1 packet taco seasoning or homemade
  • 1-2 cups shredded cheese cheddar and Monterey Jack
  • 1 cup chopped bell peppers use favorite variety

Optional Add-Ins

  • 1 tablespoon Worcestershire sauce for depth of flavor
  • 1 cup fresh vegetables zucchini or carrots can be added

Cooking Instructions

  • Brown the beef in a skillet over medium heat for 7-10 minutes and drain excess fat.
  • Sauté chopped onion and bell peppers in the same skillet for about 5 minutes until tender.
  • Combine browned beef, sautéed veggies, black beans, drained corn, diced tomatoes, and taco seasoning in the slow cooker.
  • Layer shredded cheese over the top of the mixture.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until bubbly.
  • Serve warm, optionally garnishing with cilantro or sour cream.
