Directions

  • Start by rinsing and draining your canned chickpeas.
  • Chop your cucumber, red bell pepper, and carrots into bite-sized pieces.
  • In a mixing bowl, whisk together lime juice, peanut butter, sesame oil, honey or maple syrup, and Sriracha until smooth.
  • In a large salad bowl, gently fold together chickpeas, chopped veggies, and cilantro.
  • Pour the dressing over the top and toss until every piece is coated.
  • Cover with plastic wrap and refrigerate for at least 30 minutes.
  • Just before serving, sprinkle some chopped peanuts or sunflower seeds on top for extra crunch.
