How to Make Creamy Dreamy Mushroom Risotto

  • Heat 2 tablespoons of olive oil and 1 tablespoon of unsalted butter in a large pan over medium heat. Add 1 finely chopped sweet onion and cook until translucent, about 3-4 minutes.
  • Stir in 2 minced garlic cloves, followed by 8 ounces of sliced fresh mushrooms. Cook until golden brown and have released their moisture, about 5-7 minutes.
  • Add 1 cup of Arborio rice to the pan. Stir to coat the rice evenly with the oil and butter, cooking for 1-2 minutes until slightly translucent around the edges.
  • Pour in ½ cup of white wine and stir continuously until it has mostly absorbed.
  • Begin adding 4 cups of warm vegetable broth, one ladle at a time. Stir continuously, allowing each addition to absorb before adding more, until the rice is creamy and al dente, about 18-20 minutes.
  • Once the risotto reaches a creamy consistency, remove from heat. Stir in ½ cup of freshly grated Parmesan cheese and 1 teaspoon of dried thyme; adjust seasoning with salt and pepper to taste.
