Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Chop the pumpkin and apples into even-sized cubes, aiming for about 1-inch chunks.
  • Toss the pumpkin and apple cubes with olive oil on a baking sheet. Roast for 25-30 minutes until tender and caramelized.
  • Sauté the chopped onion and minced garlic in a large pot over medium heat for about 5 minutes until translucent.
  • Add the roasted pumpkin, apples, and vegetable broth to the pot. Bring to a gentle simmer for about 10 minutes.
  • Blend the soup until smooth using an immersion blender or regular blender.
  • Stir in the coconut milk, cinnamon, and nutmeg. Heat through on low, adjusting seasoning with salt and pepper.
